15 minutes to create a Weight reducing Lunch.

Rocket and Prawn Salad

This colourful dish combines avocado and cashew nuts for a fatty acid cocktail that will plump up your skin and protect your nerve endings.

Ingredients:

1 Pink Grapefruit
Juice of 1 Lime
2 tablespoons fish sauce
1 teaspoon brown sugar
1 red chilli
Handful mint leaves
Handful coriander
200g Cooked king prawns
Handful cashew nuts
1 avocado
1 bag rocket salad

Method:

ONE
Cut the grapefruit into quarters then slice out rough chunks into a salad bowl and a squeeze and excess juice on top. Discard the skin

TWO
Finely chop the red chilli and add to the mix with the limejuice, fish sauce and sugar all of which will help to reduce some of the heat from the chilli.

THREE
Roughly chop the mint and coriander and add to the mix

FOUR
Put the prawns, cashew nuts and avocado into the bowl and serve.
