- 250g rice noodles
- Lime juice squeezed
- 1 tablespoon of fish sauce
- 1 teaspoon of chopped chilli
- 200g green beans
- 1 teaspoon ground ginger
- 1 tablespoon sesame oil
- 200g cooked prawns
- Handful spring onions
- Handful of coriander leaves
Bring large pan of water to the boil. Put the rice noodles into a bowl; carefully pour over enough boiling water to ensure they are covered. Cover and leave to soak for five minutes.
Whisk the lime juice , fish sauce , chilli and ginger to make a dressing. Drain and rinse the noodles under cold water. Toss in the sesame oil to prevent them sticking together.
Boil the green beans for three to four minutes in the remaining boiling water. Rinse under cold water to refresh. Slice into small pieces two inches will be sufficient. Add the beans to the noodles, chopped spring onions and then coriander. Now pour the dressing over the meal and serve.
