Tasty Tuna and Pepper Salad

A quick and easy salad that can be prepared the night before and refrigerated.



Method : 8 minutes preparation

Whisk together lemon Juice, olive oil, Dijon mustard and garlic in a bowl. Keep this in a small screw top plastic pot or jar.

Chop the yellow peppers, red onions and parsley. Cut the cherry tomatoes in half and drain the tuna. Combine these with the olives and spinach in a lunch box. Keep the boxes in the fridge.

Once you ve finished your workout., Pour the dressing over the salad, put the top on and give it a shake, then open and enjoy. It will be a great lunch option and taste better than a sandwich shop plus full of nutritious foods for you to enjoy.
