Hot and Spicy Sea bass

Ingredients
  • Splash of olive oil
  • 2 sea bass fillets
  • Sea salt and ground pepper
  • 100g pre-chopped onion
  • 2 teaspoon pre-crushed garlic
  • Handful asparagus
  • 6 cherry tomatoes
  • 1 tablespoon low-fat mayonnaise

Method

Step one

Heat a frying pan over a medium high heat. Add the olive oil. Season the fish with salt and pepper. When the oil is hot, add the fillets skin-side down and cook for three minutes, until the skin is crispy. Remove from the pan and set aside.

STEP TWO

Add the onion to the pan and cook for three minutes. Add the garlic and chillies and cook for another three minutes. Season to taste.

STEP THREE

Return the fish to pan. Cook for about six minutes or until the flesh flakes with gentle pressure from your finger. Steam the asparagus in a pot for four minutes. Serve with cherry tomatoes and the low fat mayonnaise. This is a lite and healthy meal which won’t leave you bloated or sluggish.
